Unfortunately sometimes it is nearly impossible to enjoy your bananas before they turn brown and start to get mushy. Fortunately you can rescue your bananas from being compost by baking with them. As bananas turn brown, more of the starches are broken down and converted to sugars, making your treats even more irresistible. Normally I would wait for my bananas to be completely brown, unlike the spotted bananas pictured below -but I really wanted to try out a few banana recipes. This one is more of an indulgence, filled with chocolate chips and peanut butter. Both today's bread and tomorrows post use peanut butter powder. Peanut powder like that PB2 or PB FIT , is made from powdered peanuts that have had the majority of the peanut oil removed. I found that the peanut powder made my bread denser that normal. But still delicious. I think reducing the flour to 3/4 cup and adding 1-2 Tbsp of water would have offset the peanut powder and helped to create a lighter bread.
Quinoa is a protein rich ancient grain. Quinoa can have a bitter taste if not rinsed before being cooked. while most commercial brands come pre-rinsed, I think they still tend to have a slight bitter taste if not first rinsed. Rinse quinoa under running water in a colander. Ingredients:
1 Roasted Red Pepper 1-2 Garlic Cloves 1 Tbsp Olive Oil 1 Tbsp Water Blend all ingredients together. This sauce pairs wonderfully with broccoli or other vegetables. It can also be added to tomato sauce or other sauces to add extra flavor. Oatmeal is often my go to breakfast food. It's a quick and easy whole food meal that will keep you satisfied until lunch.
