Quinoa is a protein rich ancient grain. Quinoa can have a bitter taste if not rinsed before being cooked. while most commercial brands come pre-rinsed, I think they still tend to have a slight bitter taste if not first rinsed. Rinse quinoa under running water in a colander.
Directions:
Cook quinoa according to the package directions. Refrigerate until chilled.
Wash celery and cut on the bias (on a slight diagonal angle).
Wash cucumber and dice.To dice cut cucumber into thirds lengthwise. Cut each third into thirds again lengthwise. If seeds are large, remove seeds. Cut each stick into 1/4 inch pieces.
Combine cooled quinoa with vegetables, cheese, vinegar, oil and oregano.
I saved the grapes to top the salad with to help the salad keep longer.
