Place turkey breast in a large pot, Cove with water. Simmer 1-2 hours, until turkey breast is tender and falling apart. Remove turkey breast and place on large plate. Break apart and place in fridge until cool enough to handle.
Add veggies to your large pot of turkey broth. Simmer for 20 minutes. Add 2 cups rice, and continue to simmer for 20 minutes.
Bring your turkey back out and transfer to a cutting board. Separate meat from the bone, chop and add to your soup. I added about 2 pounds and saved the rest of the turkey for later.
